Creamy Mung Bean Curry

Ingredients:
2 tb olive oil
1 medium onion, finely chopped
500 gr mung beans, very well washed, rinsed, and drained
1 tsp garlic powder
1 tsp ground ginger
4 tsp ground coriander
½ tsp turmeric
2 tsp sweet paprika
1 tb coconut sugar (optional)
2 vegan veggie stock cubes
About 2 ½ litres of lukewarm water, to be added gradually
1 can (400 ml) coconut milk
1 small bunch of spinach, washed, drained, and roughly chopped


Instructions:
1. Heat oil in a large non-stick pot.
2. Add onion and cook until golden.
3. Add mung beans, spices, sugar (if adding), stock cubes, half the amount of water, and stir.
4. Cook until mung beans are soft, gradually adding more water as needed.
5. Add coconut milk and spinach and cook until it thickens.
6. Adjust seasoning.
7. Serve hot over rice.
